I tried something new over the weekend and loved it so I had to share it with all you Voxers.
Egg McMuffin (the healthy version)
- 1 Whole Wheat English Muffin (2 points)
- 1/4 c. Egg Beaters (1 point)
- 2 Slices Turkey Bacon (1 point)
- 1 Wedge Laughing Cow Cheese - Light (1 point)
Cook both slices of turkey bacon in the microwave until crisp. Remove and set aside. Put the egg beaters in a small, round, microwave safe container and heat in the microwave until cooked. Meanwhile, toast the english muffin. After toasted, put it all together - spread the laughing cow cheese, place the egg and bacon, salt and pepper to taste. Enjoy!
Points will vary based on the brands you use, but my sandwich was 5 points.

Hamburger Deep Dish Pizza
- 1 lb lean ground beef
- 1 can (10 oz) refrigerated pizza dough
- 1 jar of light spaghetti sauce
- 1.5 cups skim mozzarella cheese
Preheat oven to 410 degrees. Brown hamburger meat in skillet, drain off any grease. Return meat to skillet, pour in jar of spaghetti sauce heat in skillet until hot.
Spray a 9x13 pan with cooking spray and spread dough across botto of the pan and half way up the sides. Pour the meat/sauce mixture onto pizza dough. Bake 12 minutes.
Remove from the oven and top with cheese. Return to the oven and bake 8 more minutes until cheese is golden. Let set 5 minutes before serving. Cut into 6 servings.
The points will vary based on the ingredients you choose. I used 95% fat free beef and mine was 7 points a piece.
It was so nice outside tonight that we decided to bust out the grill for hamburgers. I made a new potato wedge recipe as a side and they were delicious!
Roasted Potato Wedges (low-fat)
- 3 large baking potatos, scrubbed
- 3 large sweet potatos, scrubbed
- 3 tablespoons oil
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1 tsp paprika
Preheat oven to 425 degrees. Cut each potato lengthwise into 6 wedges. Place in bowl. Combine oil, garlic, salt and paprika; toss with potatoes coating them thoroughly. Arrange potatoes in a sinlge layer on a lightly greased baking sheet. Bake until wedges are golden brown and tender, about 25 minutes.
Makes 8 servings
Weight Watchers Points 3.5 per serving (4.5 wedges is a serving)
I LOVE the Creamy Chocolate Pie recipe my sister, Angie, sent me. It's definitely not on the Weight Watchers plan so I decided to make a low fat version of the mousse part to see how it tastes. I couldn't tell the difference. It's so yummy!
Creamy Chocolate Mousse
- 1 1/2 Cups Skim Milk (cold)
- 2 Packs Fat Free/Sugar Free Jello Instant Pudding Mix (4 serving size) - I used chocolate & white chocolate
- 1 8 oz Tub Fat Free Cool Whip
- Pour milk into large bowl and add pudding mixes
- Beat with electric whip 1 minute or until well blended (mixture will be thick)
- Gently stir in Cool Whip
- Refrigerate 2 hours
Nutrition facts will vary depending on the brand and flavors you use. Mine were:
- 765 calories, 4 grams of fat, 0 fiber
- 16 total points
- 8 servings = 2 points a serving
For a pie crust you can use low fat graham crackers with I Can't Believe It's Not Butter, but that wasn't uncluded in my calculations above.

Now that I have tried it I can say that it's darn good! I'm not quite sure why anybody would go back to making the fattening version of box cakes after they try this. It's super moist and tastes the same.
Diet Coke Cake
1 box dry cake mix
12 oz Diet Coke
Mix together until lumps are gone. Spread batter in 9x13 pan and bake as directed on the dry mix box.
that's it. super simple. very yummy. less calories.
Points value (for the batter I used) - 2 points per piece (12 pieces per 9x13 pan)
I made it through the weekend! I think the weekends will be the hardest since food is always at my fingertips :) At work I'll be more disciplined because people will be watching me and I'm too busy to snack!
Here's the recipe we tried tonight. It was yummy and only 8 points!
Chicken Parmesan
- 1 lb of boneless skinless chicken breasts (1/4 lb each - or cut in half to be 1/4 lb)
- 1/4 cup fat free mayo (I opted not to use this)
- 1/4 cup breadcrumbs (I chose seasoned ones)
- large tomato, sliced
- 4 large basil leaves
- 1/4 cup reduced fat Mozzarella cheese
- Parmesan cheese
- Garlic salt
- Pepper
Trim fat off chicken, pound them out and rinse. Season both sides with garlic salt, pepper and spread both sides lightly with mayo. Places breadcrumbs on a plate and lightly cost both sides of the chicken. Place in a greased baking dish. Top each piece with a tomato slice, basil leaf and a little Mozzarella. Bake at 425 for 15 minutes. Top with Parmesan and enjoy!
It would be an absolute sin not to share this simplistic, yet delicious recipe with the world! They are so yummy!
Chocolate Oreo Balls
Ingredients:
1 bag of regular Oreo cookies (only 2 sleeves will be used)
1 (8oz) package of softened cream cheese
1 package of chocolate almond bark
Preparation:
Put 2 sleeves worth of Oreos into a plastic bag and seal. Crush cookies with a rolling pin (or, if you have anger issues and want to crush them another way, go for it). Mix crushed cookies and package of cream cheese by hand. Roll into half inch balls and place in the fridge for about 30 minutes to chill. Melt package of chocolate almond bark. Dip chilled balls (hehe) into chocolate, place on waxed paper and refrigerate.
That's it! So simple and so tasty!

My aunt's scalloped potatoes! They are the best! Last year I got so many, I broke the plate :)
Debbie's Scalloped Potatoes
- Layer sliced potatoes in pan
- Sprinkle each layer with flour, butter, salt, pepper and American cheese
- Once layers are complete fill pan 3/4 full with Milnot
- Place a layer of cheese on top
- Bake at 375 until brown, cover top with foil and cook an additional 20 minutes
